Banoffee Baked Oats

These are a great low point/No Count snack or breakfast! They’re really quick and easy to make and you can bake them the night before and re-heat them in the microwave for a minute.

Yield:  1 portion/4 cake cases
WW SmartPoints:  6
WW No Count:  Free
Preparation time:  10 minutes
Cooking time:  35 minutes

Ingredients
40g porridge oats
1 egg
25ml skimmed milk
25ml sugar-free caramel syrup
1 banana

Method

1.  Pre-heat the oven to 180°C.

2.  Mash the banana (I use a potato masher, but a fork will be fine too)

3.  Mix in the oats, egg, milk & sugar-free caramel syrup.

4.  Spoon the mixture into silicon cake cases in a cupcake/muffin pan or silicon mould.

5.  Bake for 35 minutes until the tops are browned and the bottoms are no longer soggy.

6.  Remove from the cases/mould as soon as they are cool enough to handle to prevent them going soggy. (No one likes a soggy bottom!)

Fabulous Fakeaways – How to recreate your favourite ‘dirty’ meals at home!

Fakeaway = Fake takeaway.

As someone who loves a meal out, the flexibility of the WW plan has always served me well, but making your own ‘fakeway’ at home is also a real treat.  These are always lower in points, just as tasty and you get all of the enjoyment without any of the guilt!  We’ve made quite of few fakeaways recently, here are five of the best so far:

Burger in a bowl SW recipe tastes like a Big Mac  but without the stodginess of the bun and also because you use 5% fat beef mince it actually tastes a lot better.  The sauce is awesome.  This pic is 5sps for the burger in a bowl and 6sps for the fries.

Subway – Meatball Marinara ‘flatbread’. We used Heck smoky paprika sausages to make the meatballs, we added some Passata for the marinara sauce then put them in a pitta topped with cheese and sw sauce (from the burger in a bowl recipe above). This was very tasty! (14sps – including fries)

Nando’s – Any of the supermarkets piri piri chicken trays or the WW bake in bag (0 points!) are always a winner.  As you can see from the Subway picture I’ve also invested in some Nando’s Peri-Peri salt which is very lush.  This pic is:  Sainsbury’s piri piri chicken (4sp), onion rings (2sp), butternut squash & stir fried peppers (0sp).

Curry – Buy low fat curry sauces, use turkey if you’re really trying to save points, and serve with either brown or cauliflower rice.  For sides you can add WW naan bread and if you spray poppadums with oil/frylight and cook in the microwave they are low in points!  This Fakeaway:  Sainsbury’s lighter tikka masala sauce, turkey steak, cauliflower rice, be good naan bread, poppadom, lime chutney – 10sps

Mexican food – Stand n stuff tacos are a great new creation and they can be used with pretty much anything. Including recreating your favourite Mexican dishes at home!  This pic shows: stand n stuff tacos, turkey mince, lighter chilli sauce, be good cheese, cauliflower rice, onions, peppers, smoky paprika – 10sps.
