Ingredients

  • 4 chicken breasts
  • 8 bacon medallions
  • 4 sachets WW BBQ sauce
  • 60g low fat grated cheese (I used Sainsbury’s Be Good To You)

Method

  1. Pre-heat your oven to 180C / 350F
  2. Place the chicken breasts in a baking dish/tin
  3. Squeeze a sachet of WW BBQ sauce onto each chicken breast and spread out with a brush/spatula
  4. Layer 2 bacon medallions over each chicken breast
  5. Sprinkle 1/4 of the cheese (15g) on each chicken breast
  6. Bake in the oven for 20 minutes (or until cooked through)
    Enjoy!

No Count Sweet and Sour Chicken

A favourite fakeaway that is tasty and easy to throw together if you’re in a rush! Shows that food doesn’t need to be unhealthy to feel like a treat!

Ingredients
1tsp olive oil (from daily allowance) (If following Smartpoints use cooking spray)
80g frozen chopped onion
80g frozen chopped peppers
1 garlic clove, crushed
1/2 tin chopped tomatoes (200g)
33g pineapple chunks and a drop of the juice
1/2 tbsp sugar free caramel syrup*
1 tbsp vinegar
1 tsp chilli flakes (add to taste)
50g cooked chicken chunks

 


Method

  1. Heat the olive oil in a non-stick pan over a medium heat and fry the onion, peppers and garlic for three minutes.
  2. Add to the pan the tomatoes, pineapple, pineapple juice, sugar free caramel syrup, vinegar and chilli flakes.  Simmer for two minutes or until the sauce is your preferred consistency.
  3. Add the chicken and warm through.  Serve with a portion of brown rice or brown pasta.

 

*I get my sugar free syrup from TK Maxx and this is the one I use.

Cherry Bakewell Baked Oats

I started making these as I was looking for a tasty and filling breakfast and I’ve always loved Cherry Bakewells!  They’re really quick and easy to make and you can bake them the night before and re-heat them in the microwave for a minute.

Ingredients
40g porridge oats
1 egg
25ml skimmed milk
25ml sugar-free caramel syrup
1/4 tsp almond flavouring (adjust depending on how almondy you like them!)
16 cherries/about 50g (I use Sainsbury’s frozen dark sweet cherries & de-frost before adding)

Method

1.  Pre-heat the oven to 180°C.

2.  Mix together the oats, egg, milk, sugar-free caramel syrup and almond flavouring.

3.  Spoon the mixture into silicon cake cases in a cupcake/muffin pan or silicon mould.

4.  Place the cherries gently in the top of the mixture.

5.  Bake for 35 minutes until the tops are browned and the bottoms are no longer soggy.

6.  Remove from the cases/mould as soon as they are cool enough to handle to prevent them going soggy.
