A favourite fakeaway that is tasty and easy to throw together if you’re in a rush! Shows that food doesn’t need to be unhealthy to feel like a treat!

Smartpoints: 1 + 6sp for 60g rice/pasta
1tsp olive oil (from daily allowance) (If following Smartpoints use cooking spray)
80g frozen chopped onion
80g frozen chopped peppers
1 garlic clove, crushed
1/2 tin chopped tomatoes (200g)
33g pineapple chunks and a drop of the juice
1/2 tbsp sugar free caramel syrup*
1 tbsp vinegar
1 tsp chilli flakes (add to taste)
50g cooked chicken chunks
- Heat the olive oil in a non-stick pan over a medium heat and fry the onion, peppers and garlic for three minutes.
- Add to the pan the tomatoes, pineapple, pineapple juice, sugar free caramel syrup, vinegar and chilli flakes. Simmer for two minutes or until the sauce is your preferred consistency.
- Add the chicken and warm through. Serve with a portion of brown rice or brown pasta.
*I get my sugar free syrup from TK Maxx and this is the one I use.
